Easy Italian bean salad

Ingredients

  • 1 bunch spring onions
  • 2 garlic cloves, crushed
  • 1 red chilli, seeded and finely chopped
  • 2 x 400g cans cannellini beans, drained and rinsed
  • 1 can of butter beans
  • 6 tbsp olive oil
  • 2 tbsp white wine vinegar
  • plenty of chopped parsley

Method

Finely chop the spring onions and put into a bowl with the garlic and the chilli. Mix in the cannellini beans and the butter beans. Whisk the olive oil with the white wine vinegar and add plenty of seasoning. Stir through the salad with plenty of chopped parsley.

  • Frozen fruits of the forest
  • Banana, sliced
  • Low-fat fruits of the forest yogurt

Method

Whizz frozen fruits of the forest and sliced banana in a food processor with low-fat fruits of the forest yogurt.

Ingredients

Capri Sun Juice (or a healthier alternative)
Fresh Fruit Slices
Popsicle Sticks
Popsicle Molds (if you don’t have any, you can use small cups)

Method 

Take the Capri Sun Juice and pour it in to the molds, add some fresh fruit slices and the popsicle sticks, and pop them in the freezer. Enjoy!

Ingredients

Tomatoes (cherry or normal ones)
Cucumbers
Red onions
Olive oil
Feta cheese
1 or 1/2 tsp oregano
Red pepper
Seedless olives (black or green)
Black pepper

Method : Wash and chop all the vegetables.
Mix in a big bowl.
Drizzle some oil on the mixture.
Crumble up feta cheese over the salad.
Mix together..Et voila!Tips: you can use flavoured olive oil if you want.
